Roasted Vegetable Sandwich

There is a lot of room for personalization with this recipe.

From the bread, to the vegetables, you can really make this recipe

to your specific liking. But here is what we like to use.

 

Ingredients:

½ head cauliflower. Slice thin, ¼ thick at the most.

½ head broccoli. Slice thin, ¼ thick at the most.

6 ozs sliced crimini mushrooms

1 bell pepper thinly sliced

1 small red onion thinly sliced

Ciabatta buns

Vegan cheese

1 Avocado

Vegan mayo

Directions:

Preheat the oven to 450. Bake vegetables for 25, flipping once halfway through. You want them to be just starting to darken on the edges, be careful not to go too long and burn them. During the last few minutes I like to toast the ciabatta buns in the already hot oven with your favorite vegan cheese on top so it melts into the bun. Once the veggies are done, place them on the already toasted ciabatta and top with avocado, vegan mayo and viola, you are done. Pick the side dish of your liking…mashed potatoes, homemade baked french fries, cous cous, potato chips, etc…
