Aunt Wendy’s Black Bean Quinoa Salad

Ingredients:

1 cup quinoa rinsed

2 cups water

1 can black beans drained

1 1/2 cups corn

1 bell pepper finally chopped

1 cup of chopped tomatoes

1 can black olives

1 avacado

for vinaigrette dressing:

1 1/2 tbs. apple cider vinegar

1/4 cup cilantro chopped

juice from 1 lime

1 tsp salt

1 1/4 tsp ground cumin

1/3 cup canola oil

Instructions:

Bring water to a boil. Stir in quinoa. Return to a boil.

Reduce to simmer, cover and cook for about 25-30 minutes

Whisk the vinegar and oil together while the quinoa is cooking.

After combined, add lime juice, salt and cumin and blend.

Add quinoa to a serving bowl, then add in beans, corn, bell pepper, tomato, olives, avocado and cilantro.

Combine vinaigrette dressing with the mixture and stir until all is coated. 

Serve warm or cold!
