Sushi Rolls

Ingredients

  • Nori Sheets

  • 2 cups Sushi Rice (or med grain white rice)

  • 2 1/4 cups Water

  • 3 Tbs Rice Vinegar

  • 3 Tbs Sugar

  • 1 Tbs Mirin (or white wine)

  • 2 tsp Salt

  • 1 Cucumber 

  • 1 Red Bell Pepper 

  • 1 Carrot 

  • 1 Avocado 

  • 5 baby mushroom

  • Soy Sauce (for dipping)

     Instructions

1.    Thoroughly rinse rice until water runs clear

2.    Cook rice according to instructions

3.    Mix vinegar, sugar, and salt until dissolved and pour into rice

4.    Gently mix rice 

5.    Prepare veggies and cut into strips

6.    With rough side facing up, apply rice to nori sheet covering all edges.

7.    Apply rice 1/2" thick and leave top 1" of Nori Sheet bare.

8.    Layer veggies on bottom of nori and with a mat, or a towel carefully roll nori keeping all veggies tucked inside roll.

9.    Slice with a wet knife

10. Use Soy Sauce for dipping.
