Super Simple Portobello Dinner

 Ingredients:

·       Portobello Mushrooms (at least one per person, we like about 1 1/2 each) 

·       1 box or cup of rice

·       1 bunch of Kale

·       ½ Onion

·       Couple cloves of garlic

·       Olive Oil

Baguette

 Directions:

1.     Boil pot of water for your rice and continue as box or bag directs for rice.

2.     While the water is boiling, simmer chopped onion and garlic in 1 tbsp. of olive oil until light brown, add sliced mushroom and stir and sauté until mushroom is tender. Sprinkle with salt and pepper to taste.

3.     In another pan add a tablespoon of olive oil and sauté kale until desired texture. Add salt and pepper to taste

4. Toast baguette and add plant-based butter or dip in olive oil and vinegar
