Favorite Salad
· Tortillas- we like burrito size
· Beans - black, refried, or pinto
· Rice – Spanish, white, brown, Mexican, any preferred type
· Plant-based shredded cheese*
· Lettuce
· Kale
· Mushroom
· Bell pepper
· Tomato
· Avocado
· Black olive
· Cilantro
· Plant-based crispy tenders*
· Olive oil
· balsamic vinegar
· Pepper
Instructions
1. Cook the rice and plant-based crispy tenders as suggested. (These 2 items take the longest.)
2. Cut up the lettuce, kale, and toppings as desired. Toppings can be whatever you like, these are our favorites.
3. Mix olive oil and balsamic vinegar together to taste with a bit of pepper for the dressing.
4. Heat beans (We sometimes make our own black beans, which is delicious. Just requires planning ahead a bit. Good, affordable option, if desired.)
5. Sprinkle “cheese” on tortilla and microwave or warm for about 30 seconds, or until cheese slightly melted.
6. Add desired amount of rice and beans. Top with lettuce, kale, and other toppings. Add Crispy tenders to top and pour on dressing.
7. Enjoy the deliciousness!!
