Lasagna
Ingredient List
1 pound lasagna noodles
1 package miyokos mozzarella cheese, or your other favorite vegan mozzarella
20 ozs of your favorite marinara. We like Newmans Own Organic Sockarooni Sauce
Mushroom Spinach Filling
12 ounces mushrooms. I like crimini
1 package of your favorite meat substitute. (This can also be replaced by just adding more mushrooms if you don't want to use a meat substitute. I like to add shitakes when making it with just mushrooms)
6 cups spinach
1 medium yellow onion
1 tbsp olive oil
Saute the onion for 2-3 minutes or until browned. Add the sliced mushrooms and continue sautéing for 4-5 minutes. Then add the spinach and saute for another 2 minutes or until spinach is wilted.
Prep
Cook the noodles according to the directions or use oven ready lasagna noodles. Pour 1 cup of the marinara of your choice on the bottom of the pan, then place your first layer of noodles to cover the bottom. Then spread your favorite vegan mozzarella cheese substitute over the noodles, followed by a layer of the spinach mushroom filling, followed by another cup of the marinara. Repeat this layer process as many times as you want. We usually put down 3 layers and finish with a layer of sauce.

One of our favorites! This makes a full pan of lasagna, so great to have for leftover lunches or dinners later in the week! We are having it this evening with a side green salad and some french bread! :) Enjoy!
