Uncle Gene’s Chili
Our very first recipe we are going to share is my Uncle Gene’s (who Gene duck is named after) special Chili! 🌶 It always has been & is still a favorite! Makes a huge pot, so you can refrigerate or even freeze it to have for simple delicious lunches or dinners later on. We always pair it with some plant-based corn bread & sometimes sprinkle plant-based cheese on top too! 🌱🌽 Enjoy!
4 bags plant-based meat crumble (browned crisp with garlic)
In same pot add:
1 very large chopped onion (or 2 normal)
3 chopped green bell peppers
Sautee together, then stir in:
2 large cans kidney beans
2 large cans tomatoes
1 12oz. can tomato paste
6 pieces of sliced nacho jalapeños with a dash of the juice
1 tablespoon fresh chile powder
1 tablespoon cumin
1 tablespoon salt to taste
4 of the tomato paste cans of water (12oz)
Let simmer for an hour or more and enjoy!
